Hi, everybody, and welcome back. This is a light sort of layered cheesecake-and-pudding concoction called a rainbow spring dessert. There’s a layer of cheesecake, another of pistachio-flavored pudding, and a third of almond-flavored whipped topping, the upper two with a few drops of food coloring for prettiness and all built on a homemade pecan sandy shortcake base.
